- 3 medium sweet potatoes (about 1 lb), peeled and cut into chunks
- 1 cup unsweetened applesauce
- 1/4 cup packed brown sugar
- 1/2 cup chopped pecans or walnuts
- 1/2 tsp ground cinnamon
- 1 tbsp butter or margarine
Place sweet potatoes in medium saucepan; cover with water. Heat to boiling; reduce heat, cover, and cook 15-20 minutes or until potatoes are tender. Drain potatoes.
Preheat oven to 375 degrees. Place potatoes in an ungreased 8″ x 8″ x 2″ baking dish. Spread applesauce over potatoes. Mix brown sugar, nuts, and cinnamon; sprinkle over applesauce. Dot with butter.
Cover with aluminum foil. Bake 30 minutes or until hot.
