- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 egg
- 1 cup buttermilk
- 1/3 cup unsweetened applesauce
Preheat the oven to 400 degrees. Spray an 8″ x 8″ x 2″ baking pan with no-stick spray and set aside.
In a large bowl, stir together the flour, cornmeal, sugar, baking powder, and salt. Make a well in the center of the mixture.
In a small bowl, stir together the egg, buttermilk, and applesauce. Add the buttermilk mixture to the flour mixture and stir just until moistened.
Pour the batter into the prepared pan. Bake about 25 minutes or until a toothpick inserted in the center comes out clean. Serve warm.
