- 4 boneless, skinless chicken breast halves
- 3 tbsp lime juice
- 2 tbsp olive oil
- 1-1/4 tsp ground cumin
- 1/4 tsp salt
- 3 medium tomatoes
- 1 cup chopped avocado
- 1/2 cup chopped sweet onion
- 1/2 cup chopped fresh cilantro
- 1 small jalapeno chile, seeded and finely chopped
Place chicken in a large resealable plastic bag. In a medium bowl, mix juice, oil, cumin, and salt. Reserve 2 tablespoons of the mixture and pour the rest over the chicken. Seal bag, turn to coat chicken, and marinate in refrigerator for at least 1 hour.
Meanwhile, add tomatoes, avocado, onion, cilantro, and jalapeno to the bowl with the reserved marinade. Toss gently to mix. Cover and chill in the refrigerator.
Remove chicken from marinade. Grill or broil chicken about 6 minutes per side, or until juices run clear. Let stand 5 minutes. Serve topped with salsa.
