• 4 boneless, skinless chicken breast halves
  • 1/2 cup pecan halves
  • 1/4 cup plain dry bread crumbs
  • 1-1/2 tsp freshly grated orange zest
  • 1/4 tsp salt
  • 1/4 tsp paprika
  • 1 large egg
  • 2 tbsp water
  • 1 tbsp vegetable oil

Place chicken between two sheets of wax paper and pound to 1/4″ thickness. 

Place pecans, bread crumbs, orange zest, salt, and paprika in a food processor and pulse until the pecans are finely ground. Transfer the mixture to a shallow dish. Whisk egg and water in another shallow dish until combined. Dip each chicken breast in the egg mixture and then dredge both sides in the pecan mixture.

In a large nonstick skillet over medium heat, brown chicken in oil on both sides, 2-4 minutes per side, until chicken juices run clear. Serve immediately.
