• 4 boneless, skinless chicken breast halves
  • 1 egg, slightly beaten
  • 1/2 cup seasoned bread crumbs
  • 2 tbsp butter or margarine
  • 1-3/4 cups marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1 tbsp grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Place chicken between two sheets of wax paper and pound to even thickness. Dip chicken in egg and then into crumbs to coat. 

In a skillet over medium heat, melt butter. Add chicken and brown on both sides, 3-4 minutes per side. Pour marinara sauce over chicken. Reduce heat. Cover and simmer for 10 minutes. Sprinkle with cheeses and parsley. Cover and simmer for 5 minutes or until cheese melts.
