- 1 tbsp olive oil
- 1 lb sweet Italian sausage links
- 2 large red and/or green bell peppers, cut into 1/2″ strips
- 1 lb russet potatoes, peeled and diced (about 3 cups)
- 1 package dry onion soup mix
- 1-1/2 cups water
Heat olive oil in a large nonstick skillet over medium-high heat. Add sausage and brown evenly on all sides. Remove sausage and set aside. Add peppers to skillet and cook, stirring frequently, for 2 minutes. Add potatoes, onion soup mix, and water; stir well. Bring to a boil over high heat. Reduce heat to low, cover, and simmer 10 minutes.
Meanwhile, cut sausage into 1-inch slices. Return sausage to skillet and simmer, covered, for an additional 5 minutes or until sausage is done and potatoes are tender.
