- 3 slices bacon, cut into 1″ pieces
- 6 cups brussel sprouts, trimmed and halved
- 1 medium apple, cut into 1/4″ slices and then halved
- 1/4 tsp black pepper
- 2 tsp red wine vinegar
Preheat oven to 425 degrees. Spray a large baking sheet with no-stick spray. Arrange bacon in a single layer on baking sheet. Bake for 10 minutes or until cooked but not yet crispy.
Remove bacon from sheet and set aside. Add the brussel sprouts to the sheet and toss them in the bacon drippings, coating well. Season with the pepper. Bake about 15 minutes, or until brussel sprouts begin to brown. Add the apple pieces and bacon to the baking sheet and roast another 10-15 minutes until sprouts are tender and browned, and the apple has softened a bit.
Toss with vinegar and serve.
