• 1 lb penne (or other) pasta
  • 1 cup marinara sauce
  • 2 cups sliced fresh mushrooms
  • 1 cup chopped onion
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 1 lb medium raw shrimp, peeled and deveined
  • 2 cups chopped green pepper
  • 1/4 cup grated Parmesan cheese

Cook pasta according to package directions; drain. Put in a large serving bowl, stir in marinara sauce, and set aside.

Meanwhile, in a large nonstick skillet, saute mushrooms, onions, and garlic in olive oil until tender. Add basil, chicken broth, and lemon juice; bring to a boil. Reduce heat, add shrimp and green pepper. Simmer uncovered 5-8 minutes, or until the shrimp are pink.

Pour the shrimp mixture into the bowl with the pasta and stir gently to combine. Stir in Parmesan cheese and serve.
