• 1/2 cup butter or margarine
  • 10 eggs
  • 1 tsp baking powder
  • 1/4 tsp onion powder
  • 4 ounce can chopped green chiles
  • 2 cups cottage cheese
  • 12 ounces shredded Mexican cheese

Preheat oven to 400 degrees. Place butter in a 9″ x 13″ baking dish. Melt butter in oven.

Beat eggs lightly in a large bowl. Add baking powder and onion powder; blend thoroughly. Stir in melted butter, chiles, cottage cheese, and Mexican cheese. Mix until well blended. Pour into baking dish.

Bake 15 minutes. Reduce oven to 350 degrees. Bake another 35-40 minutes or until a knife inserted near center comes out clean. Cut into squares and serve with salsa if desired.
