• 2-1/2 to 3 lbs broiler-fryer chicken, cut up
  • 1/2 cup butter or margarine
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp paprika
  • 1/4 tsp black pepper

Preheat oven to 425 degrees. Wash chicken and pat dry. Place butter in 13″ x 9″ x 2″ baking pan. Melt butter in oven.

Meanwhile, mix flour, salt, paprika, and pepper in a large resealable plastic bag. Place chicken pieces in bag, seal bag, and toss to coat chicken; repeat as needed until all chicken is coated with the flour mixture.

Place chicken skin side down on rack in melted butter in baking pan. Bake 30 minutes. Turn chicken; bake 30 minutes longer or until tender.
