- 2-1/2 lbs broiler-fryer chicken, cut up
- 1 lemon
- 2 tsp salt
- 2 tsp sugar
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 1/4 cup butter or margarine, melted
Wash chicken and pat dry. Cut lemon in half; rub cut side of lemon over chicken, squeezing lemon to release juice.
Mix salt, sugar, paprika, and pepper. Brush chicken with melted butter and sprinkle with salt mixture. Place chicken skin side down on rack in broiler pan.
Set oven to broil (550 degrees). Broil chicken 7-9 inches from heat for 30 minutes. Turn chicken; broil 20-30 minutes longer or until tender.
Note: If it is not possible to put broiler pan this far from heat, reduce temp to 450 degrees.
