- 1 (5-6 lbs) whole chicken
- 1 tsp black pepper
- 1 tsp cumin
- 1 tbsp chili powder
- 2 tsp cayenne pepper
- 1/2 cup lime juice
- 1 bunch cilantro
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 lime
Wash chicken and pat dry. Use fingers to loosen skin on breast and drumsticks. Mix black pepper, cumin, chili powder, and cayenne together in a small bowl. Rub this mixture evenly over the entire chicken.
In a blender or food processor, combine lime juice, cilantro, garlic, and olive oil. Pulse until an even consistency is reached. Take the lime and poke several holes in it with a fork. Dust the lime with additional chili powder and place it in the cavity of the chicken.
Place chicken in a large resealable plastic bag or a slow cooker liner (has to be a bag large enough for it to seal around the chicken). Pour the marinade over the chicken. Use your hands to make sure it is applied evenly around the chicken and under the skin. Seal the bag tight so that the marinade is making contact with the chicken all over. Let it marinate in the refrigerator overnight.
Place the chicken in a slow cooker, along with any marinade left over in the bag. Cover and cook on low for 6-8 hours.
