• 2 tbsp all-purpose flour
  • 1/4 tsp black pepper, divided
  • 1 lb boneless beef bottom or top round, tip or chuck steak (1/2″ thick)
  • 1 tbsp vegetable oil
  • 1 8-ounce can diced tomatoes
  • 1 medium onion, peeled and chopped
  • 1/2 small green pepper, finely chopped

Mix flour and 1/8 tsp black pepper. Rub into all sides of beef. Cut beef into 4 pieces.

Heat oil in a large nonstick skillet over medium-high heat. Add beef and brown evenly on all sides, about 3-4 minutes per side.

Mix remaining ingredients together in a medium bowl. Pour over beef. Heat to boiling; reduce heat. Cover and simmer 45 minutes or until beef is tender.
