- 1-1/2 lbs beef round steak, cut into 1″ x 3″ strips
- 2 tbsp vegetable oil
- 1/4 cup soy sauce
- 1 cup chopped onion
- 1 clove garlic, minced
- 1 tsp sugar
- 1/4 tsp pepper
- 1/4 tsp ground ginger
- 1 16-ounce can diced tomatoes
- 2 green peppers, cut into strips
- 1/2 cup water
- 1 tbsp cornstarch
Brown beef in oil in a large skillet. Transfer to slow cooker.
Combine soy sauce, onion, garlic, sugar, pepper, and ginger in a small bowl. Pour over beef. Add tomatoes and green pepper.
Cover and cook on low for 6-8 hours. Combine water and cornstarch to make a paste. Stir into liquid in slow cooker and cook on high until thickened.
Serve over noodles or rice.
