• 2 tbsp olive oil
  • 4 cloves garlic, thinly sliced
  • 1/4 cup raisins
  • 1/4 cup vegetable or chicken broth
  • 16 ounces baby spinach
  • 1/4 tsp ground black pepper
  • 2 tsp honey

Heat oil in a large nonstick skillet over medium-high heat. Add garlic and cook until it begins to turn golden, about 1 minute. Add raisins and broth and cook until broth is almost completely evaporated, 1-2 minutes. 

Add spinach and cook, stirring frequently, until wilted, about 3 minutes. Season with pepper and drizzle with honey just before serving.
