• 1 lb fully cooked kielbasa or Polish sausage, halved and cut into 1/4″ slices
  • 1 16-ounce can kidney beans, rinsed and drained
  • 1 16-ounce can great northern beans, rinsed and drained
  • 1 16-ounce can black beans, rinsed and drained
  • 1 15-ounce can tomato sauce
  • 3 medium carrots, peeled and thinly sliced
  • 2 small onions, peeled and sliced into rings
  • 1/2 cup red wine or beef broth
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1-1/2 tsp dried thyme

Preheat oven to 375 degrees. 

Combine all ingredients in a large bowl. Pour into an ungreased 3-quart baking dish. Cover and bake for 60-70 minutes or until carrots are tender.
