• 1 lb lump crab meat
  • 1 egg, beaten
  • 1/2 tsp black pepper
  • 1-1/2 cups panko bread crumbs, divided
  • 1/2 cup mayonnaise, divided
  • 2 shallots, finely chopped, divided
  • 2 tbsp lemon juice, divided
  • 2 tsp tarragon leaves, divided
  • 2 tbsp chopped fresh chives, divided

Preheat oven to 400 degrees. Spray a baking pan with no-stick spray; set aside.

Combine crab, 1/4 tsp pepper, 1/2 cup panko, 1/4 cup mayonnaise, half of the shallots, 1 tablespoon lemon juice, 1 tsp tarragon, and 1 tbsp chives in a medium bowl. Form into 4 patties and coat in the remaining 1 cup panko.

Mix remaining pepper, mayonnaise, shallots, lemon juice, tarragon, and chives in a small bowl. Set aside.

Brown patties in a nonstick skillet coating with no-stick spray over medium heat, about 2 minutes per side. Move patties to baking pan.

Bake 5 minutes or until heated through. Serve with sauce.
