• 1-1/2 cups brown rice
  • 3 cups water
  • 2 medium ripe avocados
  • 2 tbsp lime juice
  • 1/4 cup chopped cilantro
  • 1/2 tsp ground cumin
  • 1 clove garlic, minced
  • Salt and pepper

Combine rice and water in a medium saucepan. Bring to a boil over medium-high heat. Reduce heat to low. Cover and simmer 45 minutes or until rice is tender and the liquid is absorbed.

Mash avocados in a medium bowl. Stir in lime juice, cilantro, cumin and garlic. Season with salt and pepper to taste. Stir avocado mixture into warm rice.
