• 1 large head (about 3 lbs) cauliflower, cut into florets
  • 3 tbsp butter
  • 6 cloves garlic, minced
  • 3 tbsp sour cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp freshly ground black pepper

Place cauliflower in a steamer over a large pot of boiling water. Steam for 15 minutes until tender. Remove from heat. Cover with a lid and set aside.

In the same saucepot, melt the butter over medium-high heat. Add garlic and saute until fragrant, about 1 minute. Remove from heat.

Blend cauliflower and sour cream in a food processor on high until smooth. Add to saucepot with garlic and stir well. Add Parmesan cheese and black pepper; stir well. Season with salt and additional pepper if desired.
