• 1-1/4 cups sugar, divided
  • 3/4 cup vegetable oil
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 16-ounce can lemon pie filling
  • 1-1/2 tsp ground cinnamon

Preheat oven to 350 degrees. Spray a 9″ x 13″ baking dish with no-stick spray. Set aside.

In a mixing bowl, combine 1 cup sugar and oil; mix well. Add eggs; beat until light and lemon-colored. Combine flour, sugar, baking powder, and salt in a medium bowl. Add to the egg mixture and mix well. Pour half of the batter into the prepared pan. Spread pie filling over batter. Top with remaining batter.

Combine the remaining sugar and cinnamon. Sprinkle over top of batter. Bake 30 minutes or until a toothpick comes out clean. Cool on a wire rack.
