• 1-3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1-3/4 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp grated lemon peel
  • 1 cup milk
  • 2 eggs, beaten
  • 3 tbsp butter or margarine, melted
  • 1 cup fresh blueberries

Preheat oven to 400 degrees. Spray a 9″ round baking pan with no-stick spray. Set aside.

Mix flour, sugar, baking powder, salt, and lemon peel in a medium bowl. Stir in milk, eggs, and butter until blended. Gently fold in blueberries. Pour into prepared pan.

Bake 20-25 minutes or until golden brown. Cool 10 minutes and then remove from pan.
