• 1/2 cup lime juice
  • 1/4 cup apple cider vinegar
  • 6 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tbsp dried coriander
  • 2 tsp black pepper
  • 1 tsp paprika
  • 8 bone-in chicken breast halves
  • 1/4 cup vegetable oil

Combine lime juice, vinegar, garlic, oregano, coriander, pepper, and paprika in a medium bowl. Mix well. Place chicken in a glass baking dish or Ziploc bag. Pour marinade over chicken. Cover (or seal bag) and refrigerate at least 8 hours or overnight, turning occasionally. 

Preheat oven to 375 degrees. Spray a 15″ x 10″ x 1″ baking pan with no-stick spray and set aside.

Discard marinade. In a skillet, brown chicken in oil on all sides. Transfer to baking pan. Bake, uncovered, for 30-35 minutes or until juices run clear.
