• 3/4 lb lean ground beef
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 2 cloves garlic, minced
  • 1/2 tsp black pepper
  • 2 tsp chili powder
  • 1 16-ounce can diced tomatoes
  • 1 cup water
  • 3/4 cup rice

Brown ground beef in a large nonstick skillet; drain. Stir in onion, green pepper, and garlic; cook and stir over medium heat for 5 minutes or until onion is tender. Add pepper, chili powder, tomatoes, water, and rice. Bring to a boil, stir once, cover, and reduce heat. Simmer 20 minutes or until rice is tender and liquid is absorbed.
