• 8 corn tortillas, cut in half
  • 1 lb lean ground beef
  • 3/4 cup water
  • 1 taco seasoning packet
  • 2 cups salsa
  • 1-1/2 cups shredded cheddar cheese
  • 1 Roma tomato, chopped

Preheat oven to 350 degrees. Spray an 11″ x 7″ baking dish with no-stick spray. Set aside.

Brown ground beef in a large nonstick skillet until meat is no longer pink. Stir in water and seasoning packet; simmer 5 minutes. Remove from heat.

Arrange half of the tortillas in baking dish, overlapping to create a single layer. Spoon half the salsa, half the beef mixture, and 1/2 cup cheese on top of the tortillas. Layer remaining tortillas on top of cheese, then spoon remaining salsa, beef mixture, and cheese on top. Sprinkle with chopped tomato.

Bake, uncovered, 30-40 minutes until cheese is melted and bubbly. Let sit at least 5 minutes before cutting.
