- 1 cup butter or margarine
- 1/2 cup + 2 tbsp powdered sugar, divided
- 2-1/3 cups all-purpose flour, divided
- 4 eggs
- 2 cups granulated sugar
- 1/3 cup fresh lemon juice
- 1 tsp baking powder
Preheat the oven to 350 degrees. Spray a 13″ x 9″ baking pan with no-stick spray. Set aside.
In a large bowl, cream together butter and 1/2 cup of powdered sugar until fluffy. Add 2 cups of the flour, beating until blended. Spread evenly over the bottom of baking pan. Bake 20 minutes.
Meanwhile, in a small mixing bowl beat the eggs until light and foamy. Gradually add granulated sugar, beating until thick and blended. Add lemon juice, remaining 1/3 cup flour, and baking powder. Pour lemon mixture over baked crust.
Return to oven and bake 25-30 minutes until golden and custard is set. Remove from oven, sprinkle with remaining 2 tablespoons powdered sugar. Let cool on a wire rack. Cut into bars.
