• 2 lbs sweet potatoes (about 4), peeled and cut into cubes
  • 1/3 cup apple juice
  • 1 tbsp butter or margarine
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 tsp freshly ground black pepper

Place potatoes in a medium saucepan; cover with water and bring to a boil over medium-high heat. Reduce heat, cover, and and simmer 20-25 minutes until soft enough to mash. Remove from heat and drain. 

Add remaining ingredients to potatoes and mash to desired consistency.
