- 4 ripe mangoes
- 1 medium red onion, minced
- 1 tsp ground cumin
- 1/3 cup lime juice
- 1/4 cup fresh cilantro leaves, chopped
- 1 tsp salt
- 1/4 tsp freshly ground black pepper
Stand the mangoes upright on one of the pointed ends. Cut off the fleshy cheeks on the sides, cutting as close to the pit as possible. Cut the flesh into 1/4″ pieces. Scrape the flesh from the skin with a spoon and drop into a bowl. Add the remaining ingredients to the mangoes. Toss gently to mix and let set briefly while you prepare your meal.
Note: This salsa goes great with all types of grilled seafood and meats. You can also substitute peaches or pineapple for the mangoes if desired.
