• 1-1/2 lbs small red potatoes, halved
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 2 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 6 bay leaves

Preheat oven to 400 degrees. Place potatoes on rimmed baking sheet in a single layer.

In a small bowl, combine olive oil, lemon juice, oregano, lemon zest, salt, and pepper. Pour over potatoes and toss to combine. Place bay leaves among potatoes.

Roast potatoes for 25-30 minutes or until tender.
