• 2 lbs new potatoes (such as fingerling, less than 3″ diameter), halved
  • 1/4 cup olive oil
  • 6 bay leaves
  • 1 tsp salt
  • 1 tsp paprika
  • 1/4 tsp freshly ground black pepper
  • 1/8 tsp cayenne pepper
  • 2 tbsp butter

Preheat oven to 425 degrees. Place potatoes, olive oil, bay leaves, salt, paprika, black pepper, and cayenne pepper in a medium bowl. Toss thoroughly to combine. 

Spread potatoes on a rimmed baking sheet. Roast potatoes for 30-40 minutes or until tender, stirring and turning them halfway through cooking.

Return potatoes to bowl and toss with butter. Serve immediately.
