Cake
- 1-1/2 cups corn oil
- 2 cups sugar
- 3 eggs
- 2 cups all-purpose flour
- 2 tsp cinnamon
- 2 tsp baking soda
- 2 tsp vanilla extract
- 1 tsp salt
- 2 cups shredded carrots
- 1 cup chopped walnuts
- 1/2 cup crushed pineapple
Cream Cheese Icing
- 3 ounces cream cheese
- 1-1/4 cups powdered sugar
- 1/2 cup butter
- 1/8 cup crushed pineapple
- 1/4 cup chopped walnuts
Preheat oven to 350 degrees. Spray a 13″ x 9″ baking pan with no-stick spray. Set aside.
Combine oil, sugar, eggs, flour, cinnamon, baking soda, vanilla, salt, carrots, walnuts, and pineapple in a large bowl. Mix until blended.
Pour batter into baking pan. Bake for 1 hour. Cool completely before icing.
To prepare icing, mix cream cheese, sugar, and butter until fluffy. Add pineapple and walnuts. Mix well. Spread over cake.
