• 1 15-ounce can solid pack pumpkin
  • 1 12-ounce can evaporated milk
  • 3 eggs
  • 1 cup sugar
  • 4 tsp pumpkin pie spice
  • 1 package (18-1/4-ounce) yellow cake mix
  • 3/4 cup butter or margarine, melted
  • 1-1/2 cups chopped walnuts
  • Cool whip (optional)

Preheat the oven to 350 degrees. Spray a 13″ x 9″ x 2″ baking pan with no-stick spray and set aside.

In a large bowl, blend together the pumpkin, milk, eggs, sugar, and pumpkin pie spice. Pour into baking pan. Sprinkle with dry cake mix and drizzle with melted butter. Top with walnuts.

Bake for 1 hour or until knife inserted near center comes out clean. Serve with Cool Whip (if desired).
