- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1 cup sugar
- 1-1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 3/4 cup orange juice
- 2 tbsp unsweetened applesauce
- 1 tbsp grated orange peel
- 1 egg
- 1-1/2 cups fresh cranberries
- 1 cup pecans
Preheat the oven to 350 degrees. Spray a loaf pan with no-stick spray and set aside.
In a large bowl, mix flours, sugar, baking powder, salt, and baking soda. Add juice, applesauce, orange peel, and egg. Mix well. Fold in cranberries and pecans.
Pour batter into the prepared pan. Bake for 55 minutes or until knife inserted in center comes out clean. Cool the bread in the pan for 15 minutes. Then remove from the pan and cool completely on a wire rack before slicing.
