- 1 egg
- 1 cup + 1/2 cup sugar, divided
- 1/4 cup vegetable oil
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 cup buttermilk
- 1 tbsp ground cinnamon
Preheat the oven to 350 degrees. Spray a 9″ x 5″ x 3″ loaf pan with no-stick spray and set aside.
In a large bowl, beat egg, 1 cup sugar, and oil until well blended.
In another large bowl, stir together flour, salt, and soda. Add half of the flour mixture to the egg mixture and beat until blended. Add half the buttermilk and beat until well blended. Repeat with remaining flour and buttermilk.
Combine remaining 1/2 cup sugar and cinnamon in a small bowl.
Pour half the batter into the prepared pan. Sprinkle with half the cinnamon sugar mixture. Top with remaining batter and then remaining cinnamon sugar mixture. Swirl with a knife. Bake for 60 minutes. Cool the bread in the pan for 10 minutes. Then remove from the pan and cool completely on a wire rack before slicing.
