- 1 lb ground beef, turkey, or chicken
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 green pepper, diced
- 1 14.5-ounce can diced tomatoes
- 1 8-ounce package cream cheese
- 1 taco seasoning packet
- 2 cups beef broth
- Taco toppings of your choice: avocado, sour cream, shredded cheese, minced cilantro, jalapenos
- Lime juice
In a large pot or Dutch oven, brown beef, onion, and garlic over medium-high heat for 7-8 minutes or until beef is browned through. Add the bell pepper, tomatoes, cream cheese, and taco seasoning. Stir 4-5 minutes or until mixed through. Stir in beef broth. Reduce heat to low-medium. Simmer 15-20 minutes, stirring occasionally.
Serve in small soup bowls. Top with desired taco toppings and a drizzle of lime juice.
