• 16 ounces dried lentils
  • 3 cups diced ham (omit for vegetarian)
  • 8 cups water
  • 2 celery stalks, chopped
  • 2 carrots, peeled and sliced
  • 1 medium onion, chopped
  • 1 14.5-ounce can diced tomatoes
  • 1 tsp salt
  • 1/4 tsp black pepper

Rinse and sort lentils. Combine all ingredients in a large slow cooker. Cover and cook on low for 7-9 hours or on high for 4-5 hours.

You can substitute 1-1/2 lbs pork hocks or ham bone with meat for diced ham if desired. About an hour before soup is done cooking, remove pork hocks or ham bone and set aside to cool. Remove meat from bones and return to soup. Discard bones.
