• 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 2 tbsp white wine vinegar
  • 2 tsp honey
  • 1/8 tsp paprika
  • 1/8 tsp onion powder
  • 1 tbsp poppy seeds
  • 1 5-ounce bag fresh baby spinach
  • 3/4 cup chopped celery
  • 3/4 cup dried cranberries
  • 1 15-ounce can mandarin oranges, well drained
  • 1 large Granny Smith apple, sliced
  • 1 tsp lemon juice
  • 1/2 cup pecans

Whisk together oil, vinegars, honey, paprika, onion powder, and poppy seeds to make the salad dressing. Set aside. 

Toss apple slices with lemon juice. 

Combine spinach, celery, cranberries, oranges, and apples in a medium bowl. Pour dressing over the salad mixture and toss gently to coat. Top with the pecans. Serve immediately.
