• 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp lemon peel
  • Black pepper
  • 2 cups chopped kale
  • 1 chicken breast, fully cooked
  • 2 tbsp walnuts

Whisk together olive oil, lemon juice, and lemon peel. Add fresh ground black pepper to taste. Pour dressing over chopped kale and toss to coat. Cut the chicken breast into bite-sized pieces and add to kale. Top with walnuts.
