• 1/4 cup white wine vinegar
  • 3 tbsp canola oil
  • 3 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 lb broccoli, cut into small florets and stems peeled and chopped
  • 1/4 cup dried cherries, cranberries, or raisins
  • 1/4 cup dry roasted peanuts, chopped

Whisk together vinegar, oil, peanut butter, and soy sauce in a large bowl. Toss with broccoli and dried fruit. Cover and refrigerate until serving. 

Serve topped with peanuts.
