- 1 pound lean ground beef
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1 cup chopped celery
- 1 medium clove garlic, minced
- 1 can (32 oz) diced tomatoes
- 2 cans (16 oz) kidney beans, undrained
- 1-1/2 tablespoons chili powder
- 1/4 teaspoon black pepper
In a large dutch oven, brown ground beef. Add onion, green pepper, celery, and garlic. Saute until tender, about 10 minutes. Add tomatoes, chili power, and black pepper. Bring to a boil, then lower heat, cover, and simmer at least 1 hour. Add beans. Simmer another 15 minutes.
Makes 4-6 servings.
